Italian cheesemaker Vito Minoia made the decision to bring his expertise to Australia after a trip in 1999 but it wasn’t until 2004 that he, along with his family opened their cheese factory in Cairns. Fast forward to now, and Vannella operate out of their state of the art factory in Sydney and although time has passed, Vito contiues to use the methods he perfected as a teenager to produce this outstanding cheese. This is particularly evident with the Burrata and Burratina cheeses - with every single one is lovingly crafted by Vito himself.
