A hard cheese from the north of France, Mimolette is an aged, raw cow’s milk cheese. This naturally rinded cheese is coloured with annatto which give it its distinct bright orange colour. Often referred to as Boule de Lille due to its distinctive spherical shape and often cut by using a girolle. This cheese is aged up to 6 months and is maintained constant temperature which helps develop a firm and brittle paste and an intense flavour with a hint of hazelnut and butterscotch.
